1 tin chickpeas
1 cup dried dates, soaked in boiling water for 5 mins, + 3 tbsp of the date water
1.5 cups rolled oats
1 cup almond meal
3 scoops (90g) True Protein WPI90 in French Vanilla
1 tsp vanilla bean paste
Combine the chickpeas, dates and date water in a food processor until smooth and no chunks remain.
Add in the oats and blend until well combined.
Add in the protein powder and vanilla bean paste and further process until well distributed. The mixture should be quite gooey like cookie dough! If it’s too thick, add in a little more date water and if too thin an extra tbsp of oats.
Press into a lined bread tin and allow to set for a few hours in the freezer before slicing 10 bars.
Store in the freezer.
