Preparation time: 10 minutes
Setting time: 30 minutes
1/2 cup almond meal
3/4 cup desiccated coconut
1 1/2 Tbsp lime juice
Zest of 1 lime
1/4 cup rice malt syrup (or honey)
Place all of the ingredients in a bowl and mix well until combined.
Line a small baking dish with baking paper and spread the mixture until about 1.5 centimetres thick. Press down firmly with the back of a spoon or a spatula and place in the fridge for 30 mins to set.
Once set, slice into 10 pieces and store in an airtight container.
