Ingredients
250g gluten-free arrowroot biscuits
70g vegan butter, melted
½ cup rice malt syrup
2 scoops True NIGHT 85 in French Vanilla
1 cup desiccated coconut
1 tsp lemon zest
1 Tbsp lemon juice
100g white chocolate, chopped

Place the biscuits into a highspeed blender and blitz until a soft crumb forms. Next, add in the butter, rice malt syrup and protein powder and blend until everything is combined.

Add in the coconut, lemon zest and lemon juice and mix again until combined.

Roll into balls and place into the freezer for half an hour. In the meantime, melt the chocolate by placing it into the microwave for about a minute, stirring every 20 seconds.

Drizzle the balls with chocolate and store in the fridge, enjoy!
