Lemon & Blueberry Protein Balls

Makes 18 Balls

Prep time: 15-20 minutes

Nutritional information per ball:

Calories 210

Protein 6.5g

Carbohydrates 24g

Fats 9.5g

 

Ingredients:

2 cups raw cashews (240g) 

1 cup desiccated coconut (100g) 

1/2 cup rolled oats (30g) 

2 scoops True Protein WPI90 in French Vanilla 

500g dried dates, soaked in boiling water for 5 minutes and then drained 

Juice and zest of 1 lemon 

1/2 cup dried blueberries 

 

Method: 

  1. Add the cashews, coconut, oats, protein powder, dates and lemon juice and zest into a high powered food processor and combine until sticky. 

  2. Stir through the dried blueberries and form into approx. 18 balls. 

  3. Roll in extra desiccated coconut, if desired. 

  4. Store in the fridge.
