Makes 18 Balls
Prep time: 15-20 minutes
Nutritional information per ball:
2 cups raw cashews (240g)
1 cup desiccated coconut (100g)
1/2 cup rolled oats (30g)
2 scoops True Protein WPI90 in French Vanilla
500g dried dates, soaked in boiling water for 5 minutes and then drained
Juice and zest of 1 lemon
1/2 cup dried blueberries
Add the cashews, coconut, oats, protein powder, dates and lemon juice and zest into a high powered food processor and combine until sticky.
Stir through the dried blueberries and form into approx. 18 balls.
Roll in extra desiccated coconut, if desired.
Store in the fridge.
