Ingredients
1/4 C melted butter
1 egg
1/3 C plain greek yoghurt
1 tsp vanilla extract
1/4 C pure maple syrup
zest from 1 lemon
2 tbsp lemon juice
1 C whole wheat (or plain) flour
1/4 tsp salt
1/2 tsp baking powder
1/2 tsp bicarb soda
2 tsp poppy seeds
2 tbsp True Collagen Protein Powder in Natural
Method

Preheat oven to 180 degrees (fan forced)

In a large bowl, mix together the melted butter, egg, greek yoghurt, maple syrup, vanilla extract, lemon juice and zest.

Add in all of the dry ingredients and stir until well combined

Divide the mixture between five muffin cases and place in the oven for 10-12 minutes

For the icing, mix together the lemon and icing sugar

Once the muffins have cooled, pour the icing mixture over each muffin and enjoy!
