Ingredients
1 1/3 cup wholemeal flour
2 TP scoops True Plant Protein in French Vanilla
1 tsp bicarbonate of soda
2 tsp cinnamon
2 eggs
1 1/3 cup coconut sugar
1/3 cup Greek yoghurt
1/3 cup coconut oil, melted
1 1/2 cup almond milk
2 Granny Smith apples, cored and chopped
1 tsp cinnamon (for topping)
1 tsp coconut sugar (for topping)
1/4 cup sliced almonds (for topping)

Preheat oven to 180 degrees Celsius and line a muffin tray

In a large bowl, combine the flour, protein powder and cinnamon

In a separate bowl, mix together the eggs, sugar, Greek yoghurt, oil, and almond milk

Pour the wet mixture into the dry ingredients and gently fold together, ensuring that you don’t over-mix, stir through the apples

Pour the batter 2/3 of the way into the muffin cups, combine the topping ingredients and sprinkle over the top of the muffins then bake for 20-25 minutes
