Green Apple Cinnamon Protein Muffins

Makes 12

Prep time: 15 minutes

Baking time: 20-25 minutes


1 1/3 cup wholemeal flour
2 TP scoops True Plant Protein in French Vanilla
1 tsp bicarbonate of soda
2 tsp cinnamon
2 eggs
1 1/3 cup coconut sugar
1/3 cup Greek yoghurt
1/3 cup coconut oil, melted
1 1/2 cup almond milk
2 Granny Smith apples, cored and chopped
1 tsp cinnamon (for topping)
1 tsp coconut sugar (for topping)
1/4 cup sliced almonds (for topping)


  1. Preheat oven to 180 degrees Celsius and line a muffin tray

  2. In a large bowl, combine the flour, protein powder and cinnamon

  3. In a separate bowl, mix together the eggs, sugar, Greek yoghurt, oil, and almond milk

  4. Pour the wet mixture into the dry ingredients and gently fold together, ensuring that you don’t over-mix, stir through the apples

  5. Pour the batter 2/3 of the way into the muffin cups, combine the topping ingredients and sprinkle over the top of the muffins then bake for 20-25 minutes
