Ingredients
1/3 cup coconut oil
1/2 mashed banana
1 egg
1 grated apple
1 grated carrot
1 tsp cinnamon
1 cup scotch oats or finely milled oats
1/2 cup Gluten-Free flour
1 scoop True Protein WPC80 French Vanilla
1 tsp baking powder
1 cup walnuts

Preheat oven to 180°

In a large bowl, mix coconut oil & mashed banana. Add the egg and mix well

Add the carrot and apple and combine it together. Put all dry ingredients into the bowl at once and gently fold together until just combined

Place mixture into a muffin tray and bake for 15-20 minutes

Once cooked, leave muffins on a cooling rake to cool down before consuming
