Makes: 12 cookies
Prep: 25 mins (plus 15 mins chill time)
Ingredients
1/4 cup caster sugar
Zest of 1 lemon
2.5 tbsp butter, melted
1 egg
1/2 tsp vanilla extract
1 tbsp lemon juice
1 cup gluten-free flour
1/2 tsp baking powder
Pinch of salt
2 tbsp True Collagen Natural
2 tbsp icing sugar
Method

Preheat your oven to 180'C.

In a large bowl, combine the sugar and lemon zest and use your fingertips to rub together.

Add the melted butter and vanilla and whisk to combine, followed by the egg, then the lemon juice.

Add the flour, baking powder, salt and collagen. Use a spatula to fold until combined.

Chill in the fridge for 15 minutes.

Take a tbsp of the cookie dough, roll it into a ball and coat in the icing sugar.

Place each rolled cookie on a lined baking tray and bake in the oven for 7-9 minutes.
