Vegan Choc Banana Muffins

Makes 12

Prep time: 15 minutes

Bake time: 18-20 minutes

Ingredients: 

2 bananas, mashed 

1 cup almond milk 

1/2 cup grapeseed oil 

1 tsp vanilla essence 

1 tsp apple cider vinegar 

1/2 cup granulated sweetener 

1 1/2 cups plain flour 

2 scoops (60g) True Plant Protein in Rich Chocolate 

1/3 cup cacao powder 

2 tsp baking powder 

1 tsp bicarb soda

 

Method: 

1. Line 12 muffin cups with non-stick cooking spray and pre-heat the oven to 180 degrees Celsius. 

2. Place all the wet ingredients ,along with the sweetener, into a large bowl and whisk until combined. 

3. Next, sift all the dry ingredients into a bowl, make a well in the centre and pour in the wet mixture. Stir until combined, making sure to not over-mix. 

4. Distribute the batter evenly between 12 muffin cups then place into the oven for 18-20 minutes or until a toothpick when inserted comes out clean. Allow the muffins to cool for 30 minutes before consuming. Enjoy!
