Serves 1

Prep time: 10 minutes

Cooking time: 5 minutes

Ingredients

2/3 cup oats
1.5 cup water
1 small zucchini, grated
1/2 tsp cinnamon 
1/2-1 TP scoop True Plant Protein in French Vanilla
Maple syrup, to taste
Fresh berries and nut butter of choice to top

Method

  1. Add the water and oats to a small saucepan

  2. Grate the zucchini and squeeze the liquid out of it- this will ensure the oatmeal remains a thick consistency as the zucchini can release moisture

  3. Continuously stir the oats over medium heat for 5 minutes or so, until they are thick and creamy

  4. Once thick, remove off heat and stir through the cinnamon and protein powder. Top with maple syrup, berries and a drizzle of nut butter​
