Protein Chocolate Chip Blondies

Makes 12

Prep time: 15 minutes

Baking time: 20-25 minutes


145g butter, melted
2/3 cup coconut sugar
1 egg
1 egg yoke
2 TP scoops True Plant Protein in French Vanilla
½ cup gluten-free plain flour
1 tsp vanilla extract
½ tsp bicarbonate of soda
100g chocolate chips or chunks


  1. Line a small baking tray with baking paper and preheat the oven to 180 degrees Celsius

  2. Place the sugar and melted butter into a bowl and whisk until combined

  3. Add in the vanilla, eggs, bicarbonate of soda and mix until incorporated

  4. Fold through the protein powder and flour then add in the chocolate chips/chunks towards the end

  5. Pour the batter into the tray and flatten with a spatula. Bake for 20-25 minutes

  6. Allow to cool for 30 minutes before cutting
