High Protein Choc, Peanut and Oat Cookies

Makes 9 Cookies

Ingredients

1/4 cup coconut oil 

1/4 cup maple syrup 

1 egg

1 cup rolled oats, blended into a flour

2 scoops (60g) True Protein WPI90 in Choc Peanut Butter

1 tsp baking powder 

1 tbsp cacao nibs 

1/4 cup rolled oats 

 

Method

  1. Preheat oven to 180 degrees Celsius fan forced. 

  2. Whisk together the coconut oil, maple syrup and egg in a medium mixing bowl. 

  3. Add in the oat flour, protein powder and baking powder and stir until sticky. 

  4. Stir in the cacao nibs and rolled oats until well combined. 

  5. Form 9 balls and press them flat. 

  6. Bake for 12-15 minutes, or until fluffy and crispy on the outside.
