Ingredients
3 eggs
1 cup almond milk
1 cup full fat Greek yoghurt
1/3 cup coconut oil
1 tsp vanilla bean paste
2 cups whole meal flour
1/2 cup desiccated coconut
1/2 cup coconut sugar
2 tsp baking powder
2 scoops (60g) True WPI90 in French Vanilla
1 cup coconut flakes + extra to decorate
1.5 cups frozen mixed berries
Method

Preheat oven to 160 degrees Celsius fan forced.

Whisk together the eggs, almond milk, Greek yoghurt, coconut oil and vanilla bean paste in a large bowl.

In a seperate bowl, combine the flour, desiccated coconut, coconut sugar, baking powder and WPI.

Add the dry mixture to the wet and mix until well combined.

Fold through the coconut flakes and frozen berries.

Spoon into 12 muffin cases and bake for approx 40 minutes, or until a skewer comes out dry when inserted.
