Ingredients

1 1/2 cups self-raising flour

60g WPI 90 French Vanilla

1 tsp baking powder

1 tsp cinnamon

3/4 cup almond milk

1 tbsp fresh lemon juice

1/2 cup low-fat Greek yogurt

1/2 cup granulated sweetener

2 eggs

4 tbsp coconut oil, melted

1 tsp vanilla extract

2 granny smith apples, peeled and diced

 

Method

  1. Preheat oven to 180 degrees Celsius and line a medium-sized baking tray with baking paper.

  2. Sift the flour into a large bowl then add in the protein powder, baking powder, and cinnamon. Mix until combined.

  3. Into a separate bowl, whisk together the almond milk, lemon juice, yogurt, sweetener, eggs, coconut oil and vanilla extract until incorporated.

  4. Next, add the wet mixture to the dry ingredients along with the apples and gently fold until just combined.

  5. Pour batter into lined tray and bake in the oven for 30-35 minutes or until a toothpick when inserted comes out clean. Allow to cool on a wire rack for 30 minutes before cutting into 12 slices. Enjoy!
