Ingredients
Crumble:
1 cup rolled oats
1 tsp flaxseeds
1 tsp chia seeds
1 serving (30g) True Protein French Vanilla WPC80
¼ cup chopped walnuts
¼ tsp cinnamon
¼ cup maple syrup
2 tbsp melted coconut oil
Pinch of salt
Berry compote:
1 cup mixed berries (fresh or frozen)
2 tbsp maple syrup
1 tsp water
To serve:
320g greek yoghurt
Extra cinnamon and maple syrup, to finish
Method
1. In a bowl, combine the oats, flaxseeds, chia seeds, protein powder, walnuts, cinnamon, maple syrup, melted coconut oil and salt until well coated.
2. Heat a drizzle of coconut oil or a teaspoon of butter in a non-stick pan over medium heat. Add the oat mixture and cook, stirring frequently, until golden and crisp (about 5-7 minutes). Set aside.
3. In the same pan, add the berries, maple syrup and water. Cook over medium heat until the berries have softened and the mixture thickens slightly, about 3-4 minutes.
4. To assemble, spoon the Greek yoghurt into serving bowls. Top with the berry compote, half the crumble, and finish with a sprinkle of cinnamon and drizzle of maple syrup.
