Christmas Pudding Protein Balls

Makes 12 balls

Prep time: 15 minutes

Setting time: 30 minutes

Ingredients

1 cup Medjool dates
2/3 cup almond meal
1 scoop True WPC80 in Rich Chocolate
2 Tbsp almond butter
2 Tbsp tahini
2 Tbsp cacao powder
1 tsp vanilla extract
1 tsp cinnamon
1 tsp ground ginger
1/2 tsp nutmeg
1/2 tsp ground cloves
½ cup mixed dried fruit
2 Tbsp mixed dried peel

For garnish

150g white chocolate
1 Tbsp dried cranberries
1 Tbsp pepita seeds

Method

  1. Place the dates, almond butter and tahini into a high-speed blender and blend until smooth

  2. Add in the almond meal, protein powder, cacao powder, vanilla, cinnamon, ground ginger, nutmeg, and ground cloves then continue to blend until combined.

  3. Add in the mixed dried fruit and mixed peel then pulse until evenly distributed.

  4. Roll the mixture into balls and place into the freezer for 30 minutes, in the meantime, melt the chocolate by placing it into a microwave for 1 minute while stirring every 20 seconds.

  5. Once the balls have set, pour white chocolate over each ball then top with a pepita seed and a cranberry, these can be stored in the fridge for a week.
