Chocolate Weetbix Slice

Ingredients

6 gluten-free Weetbix

1 1/2 cups desiccated coconut

1 scoop True WPC80 in Cookies and Cream

1/3 cup cacao powder

1/4 cup pure maple syrup

1 Tbsp honey (optional)

2 Tbsp almond butter

1 tsp vanilla extract


Chocolate Topping

60g dark chocolate

2 Tbsp coconut cream

1 tsp coconut oil

 

Method

  1. Preheat the oven to 160 degrees and prepare a baking tray

  2. Blend all of the ingredients together in a blender until combined

  3. Press the mixture into a baking tray with either a spoon or your fingers, once pressed evenly, place in the oven

  4. Bake for 15-20 minutes or until golden

  5. Once baked leave to cool

  6. Melt the dark chocolate and coconut oil together then stir through coconut cream

  7. Pour the chocolate topping over the base and leave to set in the fridge

  8. Slice and enjoy!
