2 large potatoes
250g frozen broccoli florets that have been thawed
1 scoop True WPI90 Natural
60g grated parmesan cheese
1 tsp garlic powder
2 tsp Italian herb mix
1 tsp salt
Preheat oven to 200 degrees Celsius and line a large baking tray with baking paper.
Place potatoes into a large pot and cover with cold water. Bring water to the boil and cook potatoes for 20-30 minutes, you still want them to be slightly firm in the centre. Drain water and let potatoes cool until they are easy to handle.
Once potatoes are cooled, remove the skins and grate into a large bowl.
Place the broccoli into a food processor and blend until it is in very small pieces, 30 seconds – one minute. Place broccoli onto a kitchen towel and squeeze all excess water out.
Add the broccoli to the grated potatoes along with the protein powder, parmesan cheese, garlic powder, Italian herbs and salt then mix everything together until combined.
Use your hands to roll the mixture into gems then place into the oven to bake for about 30-40 minutes or until golden and crispy, flipping halfway through. Serve with your choice of sauce and enjoy!
