How to Make Choc Peanut Butter Blondie Cups

  • Ingredients

    ½ cup brown sugar  

    2 eggs  

    ¼ cup butter, melted  

    ⅓ cup peanut butter (or preferred nut butter)  

    2 tbsp light milk  

    ¼ cup True Protein WPI 90 in Choc Peanut Butter

    1¼ cups self-raising flour  

    ¼ tsp salt  

    30g (2 standard rows) dark chocolate, chopped  

    ¼ cup chopped peanuts

  • Instructions

    1. Preheat your oven to 180°C and lightly grease a mini muffin tray.  
    2. In a bowl, whisk the eggs and brown sugar until pale and slightly foamy. 
    3. Add the melted butter, peanut butter, and milk, whisking until smooth.  
    4. Fold in the protein powder, flour, and salt until just combined. 
    5. Stir through the chopped dark chocolate and peanuts. 
    6. Spoon 1 tablespoon of the mixture into your muffin tray and gently press down.  
    7. Bake for 8-10 minutes, or until lightly golden on top. 
    8. Transfer to a wire rack to cool completely before storing in an airtight container.
