Prep time: 15 minutes
Cooking time: 3-4 minutes
1/4 cup chickpea flour
1/3 cup fresh or frozen corn
1 medium zucchini grated
1/2 tsp mixed herbs
Salt and pepper
1/4 tsp smoked paprika
In a bowl combine all of the ingredients and mix until combined.
Set mixture aside for 5-10 minutes while the flour soaks up the liquid from the zucchini.
Heat a non-stick frypan on medium heat, once the mixture is ready, separate into 3 separate fritters.
Fry each side for 3-4 minutes or until golden
Enjoy with a side salad of choice and some relish or dressing.
