Banana and Raspberry Pancakes

Serves 2

Ingredients

½ cup rolled oats

¼ cup wholemeal self-raising flour 

2 ripe bananas 

5 eggs 

¼ tsp cinnamon 

¼ baking powder 

1 scoop (30g) True Protein Plant Protein in Rich Chocolate

Toppings: 

¼ cup maple syrup

1 banana, sliced (optional)

1 tub Raspberry flavoured Greek yoghurt

 

Method: 

  1. In a blender, add the oats, flour, eggs, chocolate protein powder, bananas, cinnamon, and baking powder. Blend until ingredients are well combined. 

  2. Heat a fry pan over a medium heat. Once hot, add a drizzle of olive oil. Using a ladle, pour 1 scoop of pancake batter into the fry pan. 

  3. Cook for 2 to 3 minutes on one side and then flip and cook for another 1 to 2 minutes on the other side.

  4. Remove the pancake from the fry pan and place on a plate. Continue this process until you have no better left over. 

  5. Once you have built your stack of pancakes, pour the maple syrup over the pancakes with a dollop of yoghurt and sliced banana to top.
