Toasted Coconut Choc Chunk Cookies

Makes 12 Large Cookies

Ingredients:

1 cup shredded coconut, toasted 

1 cup rolled oats 

1 cup almond meal 

3 scoops (90g) True Protein WPI90 in Salted Caramel

Pinch salt 

1 tsp baking powder 

1/2 block dark chocolate (I use lindt), roughly chopped 

2 eggs 

1/3 cup olive oil 

1/3-1/2 cup coconut sugar (depending on how sweet you like it)

 

Method:

  1. Preheat oven to 180 degrees Celsius fan forced. 

  2. Combine all dry ingredients in a large bowl. 

  3. In a medium bowl, whisk together the eggs, olive oil and coconut sugar until smooth. 

  4. Pour the wet mixture into the dry and mix until well combined. 

  5. Form into approx. 12 cookie shapes and press down. 

  6. Bake for 12 minutes, or until browned. 

  7. Allow to cool completely before serving and enjoy!
