Double Chocolate Fudge Cookies

Makes 12

Prep time: 15 minutes

Baking time: 10-15 minutes

Ingredients

1 cup natural almond butter
¼ cup grapeseed oil
1 cup of coconut sugar
2 eggs
1 tsp vanilla extracts
½ tsp bicarbonate of soda
¼ tsp salt
½ cup cacao
1 scoop True Plant Protein in Rich Chocolate
100g dairy-free dark chocolate chips or chunks

Method

  1. Line a large baking tray with baking paper and preheat the oven to 180 degrees Celsius

  2. Add the almond butter, grapeseed oil, vanilla, sugar, and eggs into a bowl and whisk until fully combined

  3. Stir through the cacao powder and protein powder then fold in the chocolate chips/chunks

  4. Place tablespoon-sized portions of dough onto the baking tray and flatten, the mixture is quite wet so be careful

  5. Place the try into the oven and allow to bake for 10-15 minutes, the cookies will continue to firm as they cool so don’t worry if they look under cooked, they are meant to be fudgy. Allow the cookies to cool for half an hour before eating
