Salted Caramel Crumble

Serves 10

Ingredients

Fruit
5-6 apples (or equivalent of any fruit found in fridge / canned apples)
400g berries of choice - can be frozen or fresh (I used blueberries)
1⁄2 tsp cinnamon

Crumble
1 heaped cup almonds / almond meal
1 cup rolled oats
2 serving True WPI90 in Salted Caramel
1⁄4 cup pure maple syrup
4 Tbsp coconut oil
1 tsp cinnamon


Method

 

  1. Peel the apples and cut into small pieces (removing the core). Place all the apples into a large pot. Add in blueberries and cinnamon and 1⁄4 cup water. Place over stove top and heat till boiling, then reduce to simmer until apple is soft.

  2. Preheat oven to 180 degrees celcius.

  3. While waiting for fruit to soften, make the crumble layer. Place almonds in a blender and blend until crumbled in small pieces. Then add in the oats, protein, pure maple syrup, coconut oil and cinnamon. Stir all ingredients well until everything is combined. Set aside.

  4. Once fruit is soft, transfer into a baking dish, spread evenly and pour over crumble topping.

  5. Bake for around 25 minutes or until golden

  6. Serve and enjoy! We recommend adding ice cream or yoghurt!
