Quinoa Banana Protein Loaf

Makes 12

Prep time: 15 minutes

Baking time: 30 minutes


1 cup cooked quinoa
2 eggs
1/4 cup maple syrup
2 Tbsp butter/coconut oil
1/2 cup coconut milk
1 ripe banana, mashed
1 tsp vanilla essence
1 scoop True Prodefine in French Vanilla
1/2 cup oats
1 cup blueberries




  1. Preheat oven to 180C

  2. In a bowl, beat eggs for about 2 minutes.

  3. Add in banana maple, butter/coconut oil, vanilla & mix together well.

  4. Add the quinoa, protein & oats and fold together until just combined. Fold in the blueberries.

  5. Place in a baking tin (or muffin tray) lined with baking paper & bake for 30 minutes or until browned on top. Take out carefully & place on cooling rack. Enjoy!
