Ingredients
1.5 cups mashed pumpkin
2 eggs
1/4 cup coconut milk
1 scoop True Protein WPC 80 Raw Coconut Protein
1/2 cup gluten-free flour
1.5 tsp cinnamon
3/4 tsp baking powder
2 Tbsp coconut sugar
Optional: Walnuts for garnish
Method

Mix the pumpkin and eggs together in a large bowl until combined then add the milk and stir

Add the remaining ingredients and fold together until just combined

Spoon into a non-stick pan and cook until browned both sides

Serve with cinnamon and coconut sugar or walnuts sprinkled on top
