Orange and Poppyseed Muffins

Ingredients

1 tablespoon poppy seeds

1/2 cup skim milk 

1 2/3 cups self-raising flour

1 tsp baking powder

50g True Protein WPI 90 in French Vanilla

2 eggs

3/4 cup sugar

1/2 cup low-fat Greek yoghurt 

1/3 cup grapeseed oil

80g butter, melted

1/4 cup fresh orange juice 

2 teaspoons orange zest

Icing:

1/2 cup icing sugar 

2 tsp fresh orange juice

 

Method

  1. Preheat the oven to 180°C and line a muffin pan with 12 paper liners.

  2. Mix the poppy seeds with the milk and set aside for 10 minutes.

  3. Sift the flour into a large bowl then add the baking powder and protein powder. Mix until combined.

  4.  In a separate bowl, whisk together the eggs, sugar, yoghurt, oil, butter, orange juice, orange zest and poppy seed mixture.

  5. Pour the wet ingredients into the dry and gently fold until combined, being careful not to overmix.

  6. evenly distribute the batter between the 12 muffin cups and place into the oven to bake for 20 to 25 minutes or until a toothpick when inserted comes out clean. 

  7. To make the icing, in a small bowl, stir together the orange juice and icing sugar until smooth. Drizzle over the cooled muffins and enjoy!
