High Protein Banana Bread

Serves 8-9 Slices

Bake time: 1 hour

Protein: 7.5g  

Carbohydrate: 27g 

Fat: 19g, 1.5g Sat fat  

 

Ingredients: 

½ cup Maple syrup 

1/3 cup Extra Virgin Olive Oil & Spray 

2 Eggs 

1 cup (~2-3 medium) mashed Bananas 

¼ cup Milk (Of choice – Light milk was used here) 

1 tsp Bicarbonate of Soda 

1 tsp Vanilla extract 

½ tsp Cinnamon 

1 cup Wholemeal Flour 

1 scoop (30g) True Protein WPI90 in French Vanilla

 

Method: 

  1. Preheat the oven to 160C. 

  2. Place maple syrup and extra virgin olive oil into a mixing bowl and combine well with a whisk. 

  3. Add the eggs and combine again. Then add the banana, milk, bicarbonate of soda, vanilla extract & cinnamon and whisk together to combine. 

  4. Add the flour and protein powder and mix with a spatula until well combined. The flour will create air pockets, so make sure they are opened and mixed well. 

  5. Spray/add oil to the base of the bread tin to ensure the bread doesn’t stick. 

  6. Transfer mixture to the bread tin and spread evenly. 

  7. Put banana bread in the oven for 50-60 minutes, depending on browning preference. If you apply a toothpick to the centre of the bread, it should come out clean. 

  8. Leave for 10 minutes and transfer to a cooling tray. Once cooled, slice into 8-9 pieces. 

  9. Enjoy with your favourite hot drink!
