Ingredients
150g cashews, roasted
10 medjool dates
½ cup dried apricots
2 tbsp cacao
30g (4 metric tbsps) True Protein WPI90 in French Vanilla
1 tbsp maca powder
¼ cup almond meal
½ cup cashew butter/tahini
1 tbsp water
Method
1. Add the roasted cashews, dates, dried apricots, cacao powder, True French Vanilla WPI90, maca powder, and almond meal to a food processor. Pulse a few times until the dates are roughly chopped and the mixture is well combined.
2. Add the cashew butter (or tahini) and water to the food processor. Blend on low speed until the mixture starts to come together and stick. To test the consistency, press a small amount of the mixture between your fingers; if it sticks together, its ready.
3. Scoop out a tablespoon of the mixture at a time and roll it into balls. Transfer these to an airtight container and store them in the fridge.
