Salted Caramel Protein Balls

Makes 20 large balls 

 

Per ball

230 calories

8g protein

25g carbohydrate

11g fat 

 


Ingredients

500g dried dates 

350g cashews 

80g oats 

80g desiccated coconut 

Pinch of salt 

90g True WPI90 in Salted Caramel 

60g hulled tahini 

Extra desiccated coconut, to decorate 

 

Method

  1. Soak the dates in boiling water for about 5 minutes. 

  2. Blitz the cashews, oats, coconut and salt in a high-powered food processor for a few seconds until crumbly. 

  3. Drain the dates, reserving a couple of tablespoons of the date water. 

  4. Add the dates to the food processor, along with 1 tbsp of date water. 

  5. Combine until sticky. 

  6. Add the protein powder and tahini and blend until well combined. The mixture should hold together when pinched. If still a little dry, add another tbsp of date water. 

  7. Roll in extra desiccated coconut or other toppings (if desired) and store in the fridge.
