Ingredients:
2/3 cup coconut milk
1/3 cup skim milk
30g (4 tbsps) True Protein WPI 90 in French Vanilla
1 tsp granulated sweetener
1/2 tsp vanilla extract
1 tbsp toasted desiccated coconut
Topping:
1 tbsp toasted desiccated coconut
Method

Place all ingredients, except the desiccated coconut, into a blender and mix on high until combined.

Pour mixture into a pre frozen ice cream maker bowl and add in the coconut, churn for 20 to 25 minutes until it becomes an ice cream consistency.

Pour into a container and freeze for 4 hours.

Scoop into 2 bowls, top with desiccated coconut and enjoy!
