Chocolate and Maple Pancakes

Makes 8 small pancakes

Prep time (including cooking time): 15 minutes

Macros per pancake

Energy: 790kJ

Carbohydrates: 11.6g

Protein: 17g

Fat: 8g

 

Ingredients

Pancake Mixture 

1-2 tbsp extra virgin olive oil for cooking

1 cup wholemeal self-raising flour

1 cup milk of your choice, low-fat cow's milk used here

2 eggs

1 scoop (30g) True Plant Protein in Rich Chocolate

1 tsp baking powder

1/2 tsp cinnamon

Toppings

1 cup plain Greek yoghurt

1/4 cup maple syrup

30g walnuts, crushed

 

Method

  1. In a large bowl, add the flour, milk, egg, chocolate protein powder, baking powder and cinnamon.

  2. Mix all the ingredients together until well combined.

  3. Heat a fry pan over a medium heat. Once hot, add a drizzle of olive oil. Using a ladle, pour 1 scoop of pancake batter into the fry pan.

  4. Cook for 1 to 2 minutes on one side and then flip and cook for another 1 to 2 minutes on the other side.

  5. Remove the pancake from the fry pan and place on a plate. Continue this process until you have no better left over.

  6. Once you have built your stack of pancakes, top with Greek yoghurt, maple syrup and crushed walnuts.
