How to Make Blueberry & Pistachio Banana Bread

    1. Preheat your oven to 180°C and line a small loaf tin with baking paper. 
    2. In a large bowl, combine the mashed banana, egg, milk, Greek yoghurt, and maple syrup. 
    3. Stir in the protein powder, plain flour, and rolled oats until just combined. 
    4. Fold in the chopped pistachios and blueberries. 
    5. Pour half the batter into the lined tin. Dollop the pistachio spread and swirl with a skewer or chopstick to marble throughout the loaf. 
    6. Top with the remaining batter and smooth with a spatula. 
    7. Bake for 35–40 minutes, or until a skewer inserted comes out clean. 
    8. Let cool, then drizzle with extra pistachio spread and chopped pistachios.
