Blueberry Banana Breakfast Loaf

Ingredients

1 banana

1 egg

¼ cup olive oil

¼ cup Greek yoghurt

¼ almond milk

1 ½ cups oat flour

1/3 cup granulated sweetener

½ cup True Protein WPI90 in French Vanilla

½ tsp baking soda

Pinch of salt

¾ cup frozen blueberries, dusted with a teaspoon of oat flour

Optional toppings:

Frozen blueberries

Rolled oats

A sprinkle of sugar

 

Method

1. Preheat your oven to 180°C.

2. In a large bowl, combine the banana, egg, olive oil, Greek yoghurt and almond milk.

3. Add the oat flour, granulated sweetener, True WPI90, baking soda and salt, and mix well until combined. Gently fold in the frozen blueberries.

4. Transfer the batter to a lined loaf tin. Top with a few extra blueberries, rolled oats and a sprinkle of sugar. Place in the oven and bake for 36-38 minutes or until a skewer out comes clean.

5. Remove the loaf from the tin and place on a wire rack to cool.

6. Cut into thick slices and serve with a spoonful of vanilla yoghurt for the perfectly balanced breakfast or afternoon snack.
