Apple & Cinnamon Loaf Cake

Ingredients

 

1 1/2 cups self-raising flour

2 scoops (60g) True WPI90 French Vanilla

1 tsp baking powder

½ tsp salt

2/3 cup almond milk

2 tsp lemon juice

1/3 cup low-fat Greek yoghurt

2 eggs

1 egg white

1 cup coconut sugar

1 tsp vanilla essence

3 small apples, peeled and diced

 

Method

 

  1. Preheat the oven to 180 degrees Celsius and line a large loaf tin with baking paper.

  2. Sift the flour into a large bowl then add in the protein powder, baking powder, salt and mix together.

  3. Into a separate bowl, add the almond milk, lemon juice, Greek yoghurt, eggs, egg white, sugar and vanilla essence and whisk until combined.

  4. Add the wet ingredients into the dry and gently mix until incorporated, fold in the apples, taking care not to over-mix.

  5. Pour batter into the lined baking tin and bake for 45-55 minutes or until golden brown and a tooth pick inserted comes out clean. Allow to cool for 30 minutes before removing from the tin.
