Vegan Lemon Bliss Bars

Makes 9 bars

Preparation time: 15 minutes

Setting time: 3-4 hours

Per Bar

Carbohydrate: 15g

Protein: 5g

Fat: 7g

 

Ingredients

Base layer

8 Weet-bix

30g (1 scoop) True Plant Protein in French Vanilla

1/4 cup desiccated coconut

Juice of half lemon

1/2 cup maple syrup

1/3 cup oat milk or alternative

Top layer

1 x 400ml can coconut cream - solid part only

1/3 cup maple syrup

Juice of 1 lemon

Rind of 1 lemon

1/4 cup desiccated coconut

 

Method

  1. In a blender, add all the base layer ingredients and blend until ingredients are broken down into a sticky, sand-like consistency.

  2. Line a medium sized baking dish with baking paper and add the base layer to the dish, pressing it down firmly.

  3. Clean the blender and then to it add all the top layer ingredients.

  4. Blend all of the top layer ingredients until well combined.

  5. Pour the top layer mixture over the base layer in the baking dish.

  6. Place the baking dish in the freezer for 1 hour. Remove the baking dish to sprinkle some remaining desiccated coconut over the top.

  7. Place the baking dish in the freezer for another 2-3 hours.

  8. Cut the frozen mixture into 9 bars and enjoy.

  9. Store in the freezer for up to 7 days.
