Salted Caramel Choc Chip Banana Bread

Ingredients

2 large ripe bananas, mashed (about 300g)

¼ cup melted coconut oil

2 Tbsp pure maple syrup

¼ cup coconut sugar

1 tsp vanilla extract

1 egg

2 scoops True Collagen in Rich Chocolate

1 ½ cups oat flour

½ cup almond meal

1 tsp baking powder

½ tsp baking soda

Pinch of Himalayan pink salt

100g dark chocolate chips

 

Method

 

  1. Preheat the oven to 180 degrees Celsius and prepare a loaf tin with baking paper

  2. Combine all wet ingredients in a bowl and mix until thoroughly combined

  3. Stir through all dry ingredients excluding dark chocolate. Fold through dark chocolate.

  4. Pour the mixture into a prepared baking loaf and make sure it’s evenly spread. Sprinkle a few extra chocolate chips on top

  5. Bake in the oven for 40 minutes or until a skewer comes out clean

  6. Leave to cool, then slice and enjoy!
