2 slices wholemeal bread
2 egg whites
1/3 cup almond milk
1 tsp cinnamon
1/2 scoop True WPI90 French Vanilla
1/2 tsp coconut oil
For the blueberry compote
1 cup frozen blueberries
1 tsp coconut sugar
1 scoop True Glutamine
1 tsp cornflour + 2 Tbsp water
To make the compote, place the blueberries into a small saucepan and heat on low until soft, add in the sugar and Glutamine then stir in the cornflour mixture and heat for a further 2 minutes. Set aside.
Combine the egg, egg whites, almond milk, cinnamon, and protein powder and whisk together.
Place a slice of bread into the mixture and sit for 30 seconds then turn over and allow to sit for another 30 seconds. Repeat with the other slice.
Heat up a pan and brush with coconut oil, place the slices onto the pan and cook for 3 minutes on each side.
Remove and top with blueberry compote and Greek yoghurt!
