Ingredients
1 1/3 cups self-raising flour
60g (2 scoops) True Protein WPI90 in French Vanilla
1 tsp baking powder
1 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground aniseed
1/2 tsp ground allspice
1/2 tsp ground clove
3 bananas, mashed
2 eggs
3/4 cup milk of choice
120g butter, melted
1/3 cup granulated sweetener
1 tsp vanilla extract
Icing sugar to dust
Method
1. Preheat the oven to 180 degrees Celsius and line a loaf tin with baking paper.
2. Sift the flour, protein powder, baking powder, and spices into a large bowl.
3. Into a separate bowl, add the mashed banana, eggs, milk, butter, sweetener and vanilla essence. Whisk until combined.
4. Place the wet mixture into the dry and fold until just combined.
5. Pour batter into the lined baking tray and bake for 45 to 50 minutes or until a toothpick when inserted comes out clean. Allow to cool for 30 minutes then dust with icing sugar.
