Banana Choc Chip Muffins

Ingredients

 

1 cup wholemeal plain flour

1 cup almond meal

½ cup True WPI90 French Vanilla

2 tsp baking powder

½ tsp baking soda

2 tsp cinnamon

½ tsp nutmeg

½ tsp sea salt

3 large eggs

2/3 cup coconut sugar

3 ripe bananas, mashed

½ cup Greek yoghurt

½ cup almond milk

1 tsp vanilla extract

100g dark chocolate chunks

 

 

Method

 

  1. Prepare a muffin tray with patties and preheat oven to 180 degrees Celsius.

  2. In a large bowl, combine the flour, almond meal, protein powder, baking powder, baking soda, cinnamon, nutmeg and salt.

  3. In a separate bowl, whisk together the eggs and sugar then add in the mashed banana, yoghurt, almond milk, vanilla and mix together until thoroughly combined.

  4. Pour the wet mixture into the dry mixture along with the chocolate chunks and carefully fold until just combined, do not over mix or the muffins will become dense.

  5. Fill the muffin patties 2/3 of the way full and place tray in the oven for 25-30 minutes or until a skewer comes out clean.

  6. Allow to cool for 30 minutes before removing from the tray. Enjoy!
