Ingredients:

1/2 cup brown sugar

1/4 cup caster sugar

150g butter, melted

2 eggs

1/2 cup skim milk

1/2 cup low-fat Greek yoghurt

1 tsp cinnamon

50g (6.5 tbsps) True Protein WPI 90 in French Vanilla

2 green apples, cored and diced
Method

Preheat the oven to 180°C and line a 12-cup muffin tray with paper cases.

In a large bowl, whisk together the sugars, butter, eggs, milk, yoghurt, cinnamon, and vanilla extract until well combined.

Add the flour and protein powder, folding gently until just combined. Stir through the apple.

Divide the batter evenly between the muffin cases.

Bake for 15 minutes, or until a skewer inserted into the centre comes out clean.

Allow the muffins to cool for 30 minutes before enjoying!
