Ingredients
6 eggs
2 Tbsp extra virgin olive oil
1 medium carrot, grated
2 medium zucchinis
1 medium capsicum, finely diced
1 brown onion, finely diced
4 Tbsp chickpea flour
1 Tbsp nutritional yeast
¼ tsp turmeric
¼ curry powder
Salt and pepper, to taste
Method

Preheat oven to 180 degrees Celsius fan forced

Whisk together the eggs and olive oil

Add in the grated vegetables and mix together

Fold through the protein, chickpea flour, nutritional yeast, turmeric, curry powder, salt and pepper

Pour the batter into a lined square 20x20 baking tin

Bake for 40-45 minutes, until golden brown
