Savoury Zucchini Protein Loaf

Serves 16

 Prep time: 15 minutes

Baking time: 60 minutes

1 scoop True Vegan85 Natural

¾ cup coconut flour

1 Tbsp paprika

2 tsp cumin

2 tsp baking powder

4 tsp chia seeds

1 tsp mixed herbs

4 eggs

2 grated zucchinis

½ cup egg whites

¼ cup avocado oil

Handful of chopped coriander

Chopped cherry tomatoes





  1. Preheat oven to 180 degrees Celsius and prepare a loaf tin with baking paper

  2. Combine all ingredients in one bowl and mix until thoroughly combined

  3. Pour mixture into a prepared baking loaf and make sure it is evenly spread out, place chopped coriander and chopped cherry tomatoes on top

  4. Bake in the oven for 60 minutes or until golden

  5. Leave to cool, then slice and enjoy!
