Raspberry Coconut Protein Balls

Prep time: 15 minutes

Setting time: 20 minutes

Ingredients


1 cup almond meal
1/2 cup oat flour or ground oats
1/2 cup coconut flour
1 cup desiccated coconut
2 scoops True WPC80 French Vanilla
2 scoops True Creatine Mono
1/3 cup rice malt syrup
1/3 cup coconut oil
1/3 cup frozen raspberries, thawed and mashed
1 tsp vanilla extract
200g dark chocolate chips or chunks


Method

 

  1. Place the almond meal, oat flour, coconut flour, desiccated coconut, protein powder and creatine into a large bowl and stir until combined.

  2. Place the rice malt syrup and coconut oil into a microwave-safe bowl and microwave until melted together, stirring at 20-second intervals.

  3. Add the raspberries and vanilla extract to this then pour the wet mixture over the dry and thoroughly combine everything together.

  4. Roll into balls and place into the freezer for 20 minutes. In the meantime, melt the chocolate by placing it into the microwave for about a minute and stirring every 15 seconds.

  5. Drizzle the chocolate over half the balls and coat the other half. Place back into the freezer for 10 minutes to set. Store in the fridge or freezer and enjoy!
