Ingredients
¾ cup coconut flour
1 scoop True WPI90 French Vanilla
2 Tbsp poppy seeds
Pinch of Himalayan pink salt
1 tsp baking powder
1 Tbsp lemon juice
Zest of two lemons
2 Tbsp avocado oil
½ cup almond milk
3 Tbsp monk fruit sweetener
3 eggs
Method

Preheat oven to 180 degrees Celsius and prepare muffin tray

In a large bowl, combine all of the dry ingredients and then stir through remaining wet ingredients

Once mixed thoroughly, spoon even amounts into muffin tray

Bake in the oven for 15-20 minutes or until an inserted skewer comes out clean

Once golden, remove from the oven and leave to cool
