Lemon & Poppyseed Muffins

Makes 11

6g Protein

6g Fat

8g Carbs

 

 

Ingredients

 

¾ cup coconut flour

1 scoop True WPI90 French Vanilla

2 Tbsp poppy seeds

Pinch of Himalayan pink salt

1 tsp baking powder

1 Tbsp lemon juice

Zest of two lemons

2 Tbsp avocado oil

½ cup almond milk

3 Tbsp monk fruit sweetener

3 eggs

 

Method

 

  1. Preheat oven to 180 degrees Celsius and prepare muffin tray

  2. In a large bowl, combine all of the dry ingredients and then stir through remaining wet ingredients

  3. Once mixed thoroughly, spoon even amounts into muffin tray

  4. Bake in the oven for 15-20 minutes or until an inserted skewer comes out clean

  5. Once golden, remove from the oven and leave to cool

  6. Serve with a fresh slice of lemon and enjoy!
