Honey, Fig and Banana Bread

Makes 10 slices

Ingredients

200g (approx 2 large) bananas

1/2 cup coconut drinking milk 

1/3 cup olive oil 

2 tbsp honey

1 tsp vanilla bean paste 

2 large eggs 

2.5 cups almond meal

1/2 cup tapioca flour 

60g (2 scoops) True WPI in Honey and Banana

1 tsp baking powder 

1 tsp cinnamon 

1/4 tsp cardamon 

6 dried figs, roughly chopped 

Optional handful of pumpkin seeds and extra fig to garnish

 

Method

  1. Preheat oven to 180 degrees Celsius fan forced.

  2. In a food processor, combine all wet ingredients until smooth.

  3. Add in the flours, protein powder, baking powder, cinnamon and cardamon and process for about 10 seconds, or until combined.

  4. Roughly chop the figs and mix through the batter.

  5. Transfer to a lined loaf tin and top with extra fig and pumpkin seeds.

  6. Bake for approx. 40 minutes, or until a skewer comes out dry when inserted.
