½ cup rolled oats
½ cup toasted muesli
½ cup coconut flakes
¼ cup quinoa puffs
½ cup walnuts, chopped
½ cup cashews, chopped
¼ cup sunflower seeds
¼ tsp cinnamon
½ cup maple syrup
2 tbs peanut butter
1 scoop (30g) True Protein Plant Protein in Rich Chocolate
400g dark chocolate
In a large bowl, add the oats, toasted muesli, coconut flakes, quinoa puffs, walnuts, cashews, sunflower seeds, cinnamon, maple syrup and peanut butter.
Stir all ingredients together until they are evenly distributed throughout the mixture.
Fill a small saucepan three quarters full of water and bring to boil. Place a heat proof bowl over the water, add the dark chocolate and melt over a low heat.
In a glass backing tray add the nut mixture and spread it evenly across the tray. Make sure to push the mixture firmly into the tray to create a packed in bottom layer.
Once the dark chocolate has completely melted, pour over the bottom layer, and spread it until it covers the bottom layer.
Place in the freezer for a minimum of 4 hours and then cut into twenty small pieces.
