Vegan Vanilla Hot Cakes

Serves 2

1 cup almond milk

1 ripe banana

1 tsp vanilla extract

1 heaped scoop (40g) True Plant Protein in French Vanilla

1 tsp cinnamon

2 tsp baking flour

1 cup buckwheat flour

Pinch of salt


Caramel Sauce

1 heaped Tbsp almond butter

1 heaped Tbsp maple syrup

1 Tbsp almond milk




  1. Mash the banana into a large bowl. Add the remaining ingredients and mix well.

  2. Heat a non-stick fry pan on medium to high heat.

  3. Using 2 Tbsp of batter for each pancake, cook 3-4 pancakes at a time.

  4. Flip the pancakes when the top starts to bubble evenly, flip and cook for another few minutes. Repeat until the batter is gone.

  5. Stack the pancakes and drizzle over sauce and all your favourite toppings. Enjoy!
