Peanut Butter and Gingerbread Snowflake Cookies

Makes 16 Cookies

Prep time: 30 minutes

Cooking time: 10-15 minutes

Ingredients

2 ½ cup plain wholemeal flour, and additional for rolling out the cookies

1 egg

½ cup brown sugar

½ cup honey

1 tsp ginger spice

1 tsp mixed spice

1 tsp cinnamon

2 tbs flaxseed meal

½ tsp baking powder

1 scoop True Protein WPC80 in Choc Peanut Butter 

125g butter, melted

 

Method

  1. Pre-heat the oven to 160 degrees Celsius and line 2 baking trays with baking powder.

  2. In a large bowl add the plain flour, egg, brown sugar, honey, spices, flaxseed meal, baking powder and Whey True Protein Powder.

  3. In a small bowl, add the butter and melt it in the microwave for 30 seconds.

  4. Pour the butter into the large bowl with the other ingredients and stir through until well combined.

  5. Dust a flat bench with plain flour and roll out the cooking mixture to approximately half a centimetre. Using a snowflake cookie cutter, cut the cookies and place evenly spread out on the baking tray until there is no cookie mixture remaining.

  6. Cook the cut-out snowflakes in the oven for 10-15 minutes until slightly golden.

  7. Leave to cool before eating.
