Peach Cobbler

Serves 6

Ingredients

2 x 825g tins sliced peaches, drained

2 tbsp granulated sweetener

1 tsp vanilla essence

1 tsp ground cinnamon

1 tbsp cornflour

Topping:

60g lite butter

2 tbsp granulated sweetener

1 egg

3/4 cup plain flour

2 scoops True Protein WPI90 in French Vanilla

1/2 cup rolled oats

1 tsp baking powder

1 tsp ground cinnamon

1/3 - 1/2 cup almond milk

 

Method:

  1. Preheat oven to 180 degrees Celsius and lightly spray a medium sized baking dish with non-stick cooking spray.

  2. Place the peaches, sweetener, vanilla, cinnamon and cornflour into a bowl and toss until everything is evenly coated. Lay peach slices into the baking dish.

  3. Next, place the butter and granulated sweetener into a stand mixer with the paddle attachment and mix until smooth. Add in the egg, flour, protein powder, rolled oats, baking powder, cinnamon and almond milk then continue to mix until combined and a batter forms. Add 1/3 cup of almond milk initially then add more if it appears too thick.

  4. Spoon the dough in dollops over the peaches then bake in the oven for 30-35 minutes. Allow to cool for 15 minutes before serving. Enjoy!
